Romesco sauce is a tomato and roasted red pepper sauce which originated in Catalonia. It is traditionally served with fish but is delicious served with chicken, spread on a sandwich, as a dip or even on top of pasta. This recipe is so easy to make. Just throw everything into a blender and pulse.

Ingredients
- 12 oz jar of roasted red peppers
- 4 plum tomatoes - canned
- ¾ cup raw almonds
- 2 tablespoon fresh flat leaf parsley
- 2 tablespoon fresh basil
- 1 tablespoon sherry vinegar
- 1 tablespoon extra virgin olive oil
- 2 cloves of garlic, peeled
- ¼ teaspoon sea salt
- ⅛ teaspoon fresh black pepper
- 1 teaspoon smoked paprika
Instructions
- Pulse everything together in a blender until you have a texture similar to that of pesto
