Pumpkin Cupcakes with Cream Cheese Frosting

Nothing says fall like the perfect pumpkin cupcake. These perfect bites are loaded with ground cinnamon, pumpkin pie spice and topped with delicious cream cheese frosting.
Ingredients
  • 1½ cup of all purpose flour
  • 1¼ cup of canned pumpkin puree
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon salt
  • 1½ teaspoons of ground cinnamon
  • 1½ teaspoon pumpkin pie spice
  • ½ cup vegetable oil
  • 2 large eggs
  • ½ cup light brown sugar
  • 1 teaspoon pure vanilla extract
  • Cream Cheese Frosting
  • 8-ounce cream cheese, room temperature
  • ⅓ cup butter, room temperature
  • 2 cups confectioner sugar, sifted
  • 1 teaspoon pure vanilla extract
Instructions
  1. Preheat your oven to 350. Line a 12 cup muffin tin with paper liners and set aside
  2. In a medium bowl whisk together your dry ingredients- flour, baking powder, baking soda, salt, ground cinnamon, and pumpkin pie spice
  3. In a separate large bowl add pumpkin puree, brown sugar, vanilla extract vegetable oil and eggs
  4. Using a hand or stand mixer, whisk together the wet ingredients for one minute until combined and smooth.
  5. With the mixer on low, slowing incorporate the dry ingredients into the wet ingredients until thoroughly combined. Careful to not overmix.
  6. Fill each cupcake liner about ⅔ full.
  7. Bake for about 22-25 minutes, until tops are golden brown and a toothpick inserted in the center of the cupcake comes out clean.
  8. Remove the cupcakes from the oven a place on a wire rack to cool completely.
  9. For the cream cheese frosting: In a medium bowl whisk together cream cheese, butter, and vanilla extract until smooth.
  10. Slowly incorporate in the confectioner sugar until thoroughly combined.
  11. When the cupcakes are completely cooled, frost the cupcakes and sprinkle with a little cinnamon.
